Po’ Mans Shepherds Pie
This is literally one of the easiest meals to make and it’s basically all leftovers!
Get your St. Patty’s Day Leftovers out, grab a pie plate or two and follow these simple instructions. (We like to do this after any big feast, Thanksgiving, Christmas, Easter…you can virtually throw anything in and call it a Po’ Mans Shepherds Pie!)
- Spray your pan with some Olive Oil or Pam
- Chop up your meat, carrots, cabbage, onions into bite-sized pieces. If you need some filler, we like to add in some frozen corn or green beans…the more veggies the better!
- Then you want to cover everything with gravy. You can either make a gravy out of the juice from the slow cooker or buy a packet from the grocery store to make and pour over.
- Once your gravy is on you’ll want to take your potatoes, heat them up in a pot and mash them up. We add in some milk and herbs, salt and pepper, and whisk until they are the consistency we like (we like them a little chunky!)
- Spread your mashed potatoes over everything, cover with foil and toss it in the oven at 350 degrees for about 1 hour.
- Remove the foil, sprinkle some cheese and/or some French fried onions on top and cook for another 10 minutes. And done! Super easy, can’t go wrong with this one!
